Ceviche
Very low calorie, high protein dish. Great with crackers or corn chips.
Ingredients:
| 1.5 LB baby scallops or shrimp or sushi-quality firm white boneless fish |
| 1/4 cup red onion, finely chopped |
| 1/4 cup Cilantro, finely chopped |
| 10 Fresh Limes, juice only |
| 1 tsp. Salt (or less, to taste) |
| Non-Metallic Dish for marinating |
Preparation:
- If necessary, chop the fish into bite-sized pieces
- Remove seeds from the lime juice
- Combine all ingredients in a glass or non-metallic deep bowl. (Some salt is required)
- Marinate in the refrigerator for 3 to 4 hours
- Serve with crackers or corn chips.
